Conch Fritters


Ingredients

  • 6 medium raw conchs (ground)
  • 1 medium onion (chopped)
  • 1 medium tomato (chopped)
  • 1 cup cream
  • 2 tbsp sweet pepper (chopped)
  • 1 cup water
  • 1 tsp salt
  • 3 tbsp celery (chopped)
  • 2 tbsp butter
  • 2 eggs well beaten
  • 2 cups flour
  • 4 tsp baking powder
  • hot pepper to taste

Directions:  Stir all ingredients together making a stiff batter.  Scoop out small amounts and form into balls.  Deep fry in lots of oil.

 

Avocado, Tomato and Mango Salsa


Ingredients:

  • 1 mango - peeled, seeded and diced
  • 1 avocado - peeled, pitted and diced
  • 4 medium tomatoes, diced
  • 1 jalapeno pepper, seeded and minced
  • 1/2 cup chopped fresh cilantro
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 2 tbsp fresh lime juice
  • 1/4 cup chopped red onion
  • 3 tbsp olive oil

Directions:  In a medium bowl, combine the mango, avocado, tomatoes, jalapeno, cilantro and garlic.  Stir in the salt, lime juice, red onion and olive oil.  To blend the flavors, refrigerate for about 30 minutes before serving.  Serve with tortilla chips.  Also fantastic on white fist.  Serves 6

 

Coconut Shrimp


Ingredients:

  • 2 lbs shrimp
  • 1 cup evaporated milk
  • 2 eggs
  • 1 large box cracker meal
  • 1/2 cup granted coconut
  • 2 tbsp seasoning salt
  • frying oil

Directions:  Add seasoning salt to shrimp and set aside for a few hours.  Beat eggs well in a small bowl.  Combine cracker meal and coconut in a mixing bowl.  Place shrimp in evaporated milk, then eggs, then cracker and coconut mixture.  Fry in a large pan until golden brown.  Cooking Time 20 Minutes.  Serves 8

 

Jerk Chicken


Ingredients:

  • 2 lbs chicken pieces
  • 3 tbsp Jerk seasoning
  • 1 tbsp soy sauce

Directions:  Mix all ingredients in small bowl until well blended.  Marinate a few hours or overnight.  Place on greased grill over hot coals or on rack of broiler pan 5-7 inches from heat.  Grill or broil 40-45 minutes or until cooked through, turning frequently. Cooking time 30 minutes
