Caribbean Recipes and Rums

Regardless if you are on a cruise ship headed for the Caribbean or in your backyard daydreaming, these cocktail recipes will serve you if your make them yourself or if you order them on deck while tanning in the sun aboard one of those mega floating resorts.

Recipe:  Mango Margarita

  • cup peeled sliced mango
  • 1 oz. tequila
  • oz. Cointreau
  • lime
  • splash Chambord

In blender, squeeze juice of lime.  Add mango and blend.  Add other ingredients except Chambord and blend.  Combine with ice then serve topped with a splash of Chambord and garnished with a lime wedge or wheel. 

Recipe: Tequila Sunrise 

  • 1 oz. tequila
  • 3 oz. orange juice
  • oz. cranberry ice

Combine all ingredients in blender with ice.  Serve with lemon slice dipped in sugar.

Recipe:  Mojito

  • 1.5 oz. BACARDI Rum
  • 12 fresh spearmint leaves
  • lime
  • 7 oz. club soda
  • 2 tbsp simple syrup (or 4 tsp sugar)

Gently crush mint leaves and lightly squeeze lime in a cool tall glass.  Pour sweet syrup to cover and fill glass with ice.  Add Bacardi rum and club soda and stir your emerging mojiot well, Garnish with a lime wedge and a few sprigs of mint.

Recipe:  Pina Colada 

  • 2 oz. light rum
  • 3 oz. pineapple juice
  • 2 oz. Coco lopez coconut cream ice.  Mix in blender and pour into colada glass.  Serve with cherry and pineapple slice.

Recipe:  Jamaican Beetroot Drink

  • 2 cups beetroot
  • 1 lemon/lime
  • 2 cups water
  • 2 cups sugar
  • 8 whole cloves
  • 1 cup rum

Wash beet and cut up coarsely.  Extract juice from lemon/lime.  Boil beet in water for 20 minutes, then strain.  Stir sugar into the strained liquid, then add cloves and lime/lemon juice.  Add 1 cup rum then pur into bottle.  Leave to ferment for three weeks. Preparation time:25 minutes.  Serves 6

Recipe:  Bahama Mama 

  • 1/2 oz dark rum

  • 1/2 oz 151 rum

  • 1/2 oz coconut liqueur

  • 1/2 oz coffee liqueur

  • 4 oz. pineapple juice

  • 1/4 oz. lemon juice

Stir all ingredients with ice.  Strain into a chilled tumbler filled with ice.  Garnish with a strawberry or cherry.
